1) 100% Lucca Olive Oil The Lucca Olive was developed at UC Davis with the intent of creating a variety of olive for olive oil production that thrives in the California climate. Lucca, however, can be referred to as an Italian variety because it is strictly based and developed from an Italian variety called Frantoio. Despite Lucca's inherent benefits, we are one of the only producers of 100% Lucca olive oil in the world. As a result, we are producing olive oil of the highest quality and yet one that is uniquely different than any oil produced in California or Europe.
2) We do not trade Quality for Quantity We harvest early in the season when oil will be superior quality and thus forgo highest possible yields. While our trees may yield less than other producers, Olive Hill Farm believes in producing the highest quality product, one made from a variety ideally suited for our climate.
3) Hand picked This is the most effective way to ensure quality because the olives and trees are not damaged during harvest by mechanical harvesting equipment.

COOC Certified! In all objective lab tests and subjective blind taste tests relating to the quality of olive oil conducted by the COOC (California Olive Oil Council), we were well within the benchmarks that determine if an oil is certified extra virgin (currently the highest benchmark for olive oils).
